Chicken Fruit Salad


  • 3 cups of 1” diced all white chicken meat (thawed)
  • 2 Red apples – core and cube (do not peel)
  • 1 Cup of green grapes (halves)
  • ½ Cup of chopped celery pieces
  • 1 Can of sliced peaches (drained)
  • 1 Orange peeled and cubed
  • ½ Cup of chopped walnuts OR chestnuts (optional)
  • 2 Tbsp of honey
  • 1 Tbsp of lemon juice
  • 3 Tbsp of mayonnaise
  • ½ Cup of sour cream
  • Dash of salt


  1. Combine all of the above ingredients together in a large mixing bowl and mix until thoroughly blended.
  2. Taste test and add salt or additional mayo if needed.
  3. Cover and place in the refrigerator for a minimum of 2 hours or overnight.

Helpful Hint:
If you are making a day ahead, keep chicken frozen and place all ingredients in a large zipper lock sealed bag. In the morning the chicken will be thawed and marinated with all the fruit flavors and ready for eating.
