Wild Rice Chicken Casserole

Ingredients:

  • 2-3 lbs cooked, diced chicken
  • 8-10 oz wild rice, cooked
  • 4 oz low fat sour cream
  • 1/2 cup mayonnaise
  • 3/4 cup mushrooms
  • 1 can cream of chicken
  • 1/2 box Cheez-Its, crumbled
  • 1/2 stick butter

Preparation:

  1. Preheat oven to 350.
  2. Cook rice as directed on box.
  3. When rice is done, mix together with cooked chicken.
  4. Add sour cream, mayonnaise, soup and mushrooms to the mixture. Spread mixture evenly in a greased, 9×13 pan.
  5. Place Cheez-Its in a gallon sized Ziploc bag and crush the crackers. Cover the casserole with crushed crackers and pats of butter.
  6. Cook for 35-40 minutes.
